Mezcal Negra Soledad Joven is a potent and vibrant organic mezcal produced with maguey Espadín capon, which is characterized by its high level of maturation. A high mountain agave that, due to the conditions in which it grows, obtains a unique and authentic flavor. It is elaborated in a patient and dedicated way by the Master Mezcalero Nicolás Hernández in Santiago Matatlán, Oaxaca.

This artisanal organic mezcal is made exclusively with mature (8 -10 year old) agave grown in hillsides with a long-term sunlight exposure, proper water drainage, and nutrient-low soil. These conditions facilitate longer roots and a healthier plant without the need for artificial chemical fertilizers, pesticides, or herbicides. The piñas are cooked in cone shaped stonework ovens by “mezquite” wood combustion for 5-8 days depending on weather conditions, then ground in a millstone pulled by horse. Fermentation is done with natural yeasts (no additives) for 3-5 days in classical open fermenter wooden vats.
